Bethesda announced that it has removed Denuvo technology from the Steam version of Prey. As such, the Steam version is now up to date with the GOG version of Prey, released in May 2020.

Bethesda is one of the few publishers that constantly removes Denuvo from its older games. For example, in 2019, the publisher removed Denuvo from RAGE 2. In 2018, Bethesda and Arkane Studios removed Denuvo from Dishonored 2. And in 2016, the publisher removed Denuvo from the Doom 2016 game.

As always, Steam will download this latest update the next time you start your client. Bethesda has not provided any change logs for this update; therefore, it probably doesn't come with any other adjustments, changes or improvements.
